Saturday, Matt was itching to do another brew, and his brother, we’ll just call him J, was ready to starting boiling down some sap to make syrup. I think it’s still a little early in the season, but he’s got quite a bit from the trees he’s tapped and was eager to get going.

They set up a double brew, as Matt called it. He was brewing his first all-grain batch with the propane burner and J had a setup built with an old wood-burner and some custom-weld pans to reduce the sap.

The resulting product was very light, which is just how I like it. The darker amber the syrup, the sharper the maple taste.

J delivered a jam jar full to our house Sunday morning, just in time for the waffles that Matt had made for breakfast. Yum!
